This Cheesy Garlic Bread is truly life changing: buttery, garlicky, cheesy, and crisp without being heavy — just the way garlic bread should be.

Why You’ll Love This Recipe

If you’ve ever craved garlic bread that’s more than just buttery bread, this one delivers. Roasted garlic infuses a deep, mellow flavor; a custard of butter, egg, and milk ensures every bite is rich and moist; and topping it off with melted mozzarella gives that irresistible, gooey cheesy finish. Plus, you get crisp edges and soft interiors — a balance that’s tough to beat. Whether for a party, a side, or an indulgent snack, this recipe checks all the boxes.

Ingredients

Roasted Garlic

  • 8–10 garlic cloves, peeled
  • 2 tablespoons olive oil
  • Pinch of salt

Garlic Butter Custard

  • Roasted garlic (from above)
  • ½ cup (113 g) butter, melted
  • 1 egg
  • ¼ cup (60 g) milk
  • ½ tsp salt
  • ½ tsp paprika
  • 2 tbsp fresh chopped parsley

Assembly

  • 12 King’s Hawaiian Original Sheet Rolls (in full sheet form)
  • 2 cups shredded mozzarella cheese
  • Chopped parsley and chili flakes (for serving)

Instructions

1. Roast the Garlic

  • Preheat oven to 400°F (200°C).
  • Toss garlic cloves with olive oil and a pinch of salt.
  • Place them in a small oven‑safe dish with a lid or cover tightly with foil.
  • Roast ~20 minutes until soft and golden.
  • Mash with a fork and set aside.

2. Make the Garlic Butter Custard

  • In a bowl, combine mashed roasted garlic, melted butter, egg, milk, salt, paprika, and parsley.
  • Whisk thoroughly until fully blended.

3. Prepare the Bread Sheets

  • Lower oven to 350°F (175°C).
  • Slice the full sheet of rolls into two halves (horizontally).
  • Place them cut‑side up on a baking sheet and bake 8–10 minutes until lightly golden and slightly crisp.

4. Dip & Bake

  • Pour the garlic butter custard into a shallow pan.
  • Gently dip each half‑sheet of bread into the custard, coating well on all sides.
  • Return to the baking sheet and bake 15–18 minutes at 350°F until golden.

5. Add Cheese & Broil

  • Sprinkle shredded mozzarella over the top of the baked bread.
  • Switch oven to broil (grill). Broil for ~5 minutes, or until cheese is melted, bubbly, and lightly golden.

6. Finish & Serve

  • Garnish with fresh parsley and chili flakes.
  • Slice and serve warm.

Notes & Tips

  • Bread choice: You can replace King’s Hawaiian rolls with a similar-size French baguette or sandwich loaf, but the enriched rolls add extra softness and flavor.
  • Broiling: Keep close watch under the broiler to avoid burning the cheese.
  • Advance prep: Roast garlic ahead of time and keep it stored in oil in the fridge. Then the rest of the build goes quickly.
  • Heat variation: If your oven runs hot, reduce bake time slightly and monitor the browning.
