This Cheesy Garlic Bread is life changing: buttery, garlicky, cheesy and crispy without being heavy – exactly how it should be.

Why You’ll Love This

This recipe takes classic garlic bread to the next level. Roasted garlic delivers deep, caramelized flavor, while the buttery custard creates a rich, moist base. The final broil adds a golden, cheesy crust that’s utterly addictive. It’s easy to prep, perfect for gatherings, and guaranteed to disappear fast!

Ingredients

Roasted Garlic:

  • 8–10 garlic cloves
  • 2 tbsp olive oil
  • Pinch of salt

Garlic Butter Custard:

  • Roasted garlic (from above)
  • ½ cup butter, melted (113g)
  • 1 egg
  • ¼ cup milk (60g)
  • ½ tsp salt
  • ½ tsp paprika
  • 2 tbsp chopped fresh parsley

Assembly:

  • 12 King’s Hawaiian Original Sheet Rolls (or 1 French baguette)
  • 2 cups shredded mozzarella cheese
  • Chopped parsley and chili flakes for serving

Instructions

Roast the Garlic:

  1. Preheat oven to 400°F (200°C).
  2. Toss peeled garlic cloves with olive oil and salt.
  3. Place in a covered oven-safe dish or foil pouch.
  4. Roast ~20 minutes until soft and golden. Mash with fork and set aside.

Make the Garlic Butter Custard:

  1. Whisk together mashed garlic, melted butter, egg, milk, salt, paprika, and parsley in a bowl until smooth.

Assemble the Bread:

  1. Reduce oven temperature to 350°F (175°C).
  2. Halve the sheet rolls horizontally and place on a baking sheet. Bake for 8–10 minutes until golden and slightly crispy.
  3. Dip each half into the garlic butter custard, coating all sides well.
  4. Return bread to baking sheet and bake for 15–18 minutes until golden brown.
  5. Sprinkle mozzarella on top and broil for 5 minutes, or until cheese is melted and bubbly.
  6. Garnish with parsley and chili flakes. Slice and serve.

Notes

  • Bread: You can swap Hawaiian rolls for French bread or ciabatta. Just adjust baking time as needed.
  • Garlic: Roasted garlic is milder and sweeter than raw. Don’t skip this step!
  • Broiling Tip: Keep a close eye during broiling to prevent burning the cheese.
  • Storage: Best enjoyed fresh, but leftovers can be wrapped in foil and reheated in the oven at 325°F until warmed through.
