These Pizza Pot Pies are the perfect marriage between two favorites—fluffy biscuit crusts stuffed with gooey mozzarella, savory pepperoni, and zesty pizza sauce. Easy to make, these individual bites are ideal for parties, game day, or weeknight fun!

Ingredients

For the Biscuit Cups:

  • 8 refrigerated biscuits (from a 16 oz package)
  • Cooking spray or oil (for greasing tins)
  • ¼ cup pasta or pizza sauce (meatless)

Filling and Seasoning:

  • 3 oz pepperoni, chopped
  • 7–8 oz shredded mozzarella cheese

Butter Mixture:

  • 1 tbsp butter, softened
  • ½ tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp Italian seasoning (plus more for topping)
  • Pinch of black pepper

Instructions

  1. Prep Butter Mixture: In a small bowl, mix butter, olive oil, salt, garlic powder, Italian seasoning, and black pepper.
  2. Prepare Tins: Preheat oven to 350°F. Grease muffin tin or foil muffin cups (3.5-inch round, ½-cup capacity). Wipe away excess oil.
  3. Shape Dough: Place each biscuit into a muffin cup, pressing up the sides to form a crust. Prick bottoms and sides with a fork.
  4. Brush & Fill:
    • Brush inside with butter mixture.
    • Spread about ½ tsp pizza sauce inside each.
    • Add 1 tbsp mozzarella, then ½ tbsp pepperoni.
    • Repeat with another layer of mozzarella and pepperoni.
    • Sprinkle tops with extra Italian seasoning (optional).
  5. Bake:
    • If using foil cups, place them on a baking sheet.
    • Bake 20–23 minutes or until golden and bubbly.
  6. Serve: Let cool slightly. Gently lift from pan and serve warm.

Notes

  • Check at 15–18 minutes and rotate pan if needed for even browning.
  • Use a spatula to help separate biscuits if they touch in a muffin pan.
  • Serve directly in foil cups for mess-free entertaining.
